Norwegian salmon is known to all for its delicacy. In particular, Riunione operates a careful selection of suppliers who only handle fresh and top quality raw material from controlled farms located in the clear waters of Norwegian flowers. The processing is carried out strictly following the traditional techniques: the fresh salmon is dry salted “dry salted” (without injecting water and salt as in modern processing); the fillet, covered with a thin layer of salt, is left to rest for a few hours ensuring a better shelf life of the product in a completely natural way. Smoking is also carried out in the traditional way, not using artificial smoke aromas but using mixtures of precious woods.
