Eternal antagonist of the Norwegian, today the Scottish salmon has managed to be appreciated for its stronger taste, obtaining a clear portion in the smoked market. Ideal for simple appetizers or for any dish that leaves room for all its flavour. Riunione carefully selects the suppliers who buy the raw material, making sure that it is always of the highest quality and that it comes from controlled farms located in the cold and uncontaminated seas of Scotland. Processing is carried out strictly following traditional techniques: the fresh salmon is dry salted “dry salted” (without injecting water and salt as in modern processing); the fillet, covered with a thin layer of salt, is left to rest for a few hours, thus ensuring that the product can be preserved in a completely natural way. Smoking is also carried out in the traditional way, not using artificial smoke aromas but using mixtures of precious woods.
